Homemade Chocolate Coconut RX bars

Happy Tuesday!  Hope your week is off to a great start!  Trying to get back into the swing of things after our long weekend.  It is amazing how much catch up is required after just a couple of days away.

I wanted to pop in to share a new recipe with you.  I love snack bars of all kinds (RX Bars, Larabars and Quest Bars are my current faves).  They are just so convenient to keep in a purse, desk or gym bag, and help prevent me from hitting up a vending machine when the hungries strike.  But they can get pricey.  I also love knowing exactly what is in my food, so I often try to make variations at home.  Which leads me to this…

Homemade Chocolate Coconut RX Bars!  These are no bake, come together super quick and pack a healthy dose of protein.


Homemade Chocolate Coconut (Copycat) RX Bars:

Makes 6 bars


  • 12 Tablespoons Egg White Powder (I got mine from Trader Joes)
  • 18 pitted dates
  • 1/3 Cup raw almonds
  • 1/3 Cup cashews
  • 1.5 Tablespoons shredded unsweetened coconut
  • 1-2 Tablespoons unsweetened cocoa powder (depending on how chocolaty you like it)
  • Pinch salt
  • 1-3 Tablespoons of water (if needed)

Directions: Add all ingredients, with the exception of the water, to the food processor.  Began blending until all ingredients are finally chopped and beginning to form a ball.  If the mixture is too dry and is not beginning to form a ball, slowly add water, 1 tablespoon at a time, until mixture becomes sticky and starts to ball up.  The combined product should resemble a grainy dough, with no visible dry ingredients.  Once mixed, scoop into an 8 x 8 dish that has been lined with parchment paper.  Press down into pan, forming a smooth, even sheet of the mixture.  Cover and place in the fridge for approximately 30 minutes to allow to set.  Cut into bars and enjoy!
