Weekend recap (When the going gets rough, make a smoothie)

This weekend did not go as planned.  We started strong!  I enjoyed a lovely dinner at my favorite Vietnamese place, with a good friend Friday night. I had a great class on Saturday morning.  Started planning some workouts for the week.

But by Saturday afternoon, we were battling injuries – I smashed my heel into the coffee table while dancing with my little dude, it is a black and blue mess.  As well as illness, fortunately whatever bug we have has been short-lived, and we are now on the up and up.  Special thanks to the hubs, who is an awesome caregiver, and took great care of the babes and I.

So instead of boring you with our lazing on the couch activities of the weekend.  I thought I would share a recipe with you instead!  This is the babies’ favorite smoothie recipe.  It is on frequent rotation in our house.  Usually I will make the babes one to share, and will make another for myself, adding in a scoop of protein powder (Vega Bodacious Berry Protein Smoothie is delicious in this) and occasionally some Spirulina.

Pina Green-lada Smoothie (or the babies’ favorite smoothie)

Ingredients:

  • 1 banana (frozen)
  • 1.5-2 cups coconut water
  • 1 cup pineapple (frozen)
  • .5 cups spinach (frozen)

Directions:  Add all ingredients to a blender and mix until smooth.  Serve immediately. *If you do not have frozen fruits/veggies, fresh works great as well, but you may want to add some ice and a little more coconut water to get a nice, super cold smoothie.
