A day in eats!

First things first, I wanted to give a big shout out to my brother, who just passed the Oregon State Bar Exam!  Woot, woot, congrats Guy!  He prepped for this all while working tons and adjusting to married life.  He is truly amazing, and when I get overwhelmed in life, I channel him to get myself refocused.  So proud of him!

Today, I thought I would share a day in eats.  I have always enjoyed these type of posts on other blogs.  There is just something so interesting and fun about seeing what other people eat.  I have also found some great meal/snack ideas this way.  This is what I ate yesterday (Monday).

Started the day with my go to, before teaching class drink: iced coffee, with a splash of unsweetened almond milk, collagen and chocolate protein powder.  Delish!

Breakfast a couple of hours later was mango flavored greek yogurt, with blackberries and a packet of Omega Trex Mix from Trader Joes.

Late morning snack was a raspberry, orange and banana smoothie shared with my favorite little dude.

Lunch, served up by Trader Joes! Chicken Burrito Bowl.  I usually pack a salad or leftovers for lunch, but after a rough weekend, I was not up to packing lunch this am.  This was pretty good though, and kept me full all afternoon.

Dinner was a taco salad with homemade birria, beans, cotija cheese (my favorite!), salsa and a side of chips.

*Unpictured – some cheese and crackers shared with my sweet girl, when a toddler wants to share her eats with you, that means it is time to have a snack.

Anything good on the menu today?  I am having leftover taco salad for lunch, and am really looking forward to it!

  1. I’ve seen that chicken burrito bowl at TJ’s – glad to see you gave it two thumbs up – while I enjoy meal planning some mornings I would just like something to grab and go, ya know?!
