Snack time! Roasted Everything Edamame

Happy hump day friends!  How is your week treating you?  My week started off pretty bumpy, but is shaping up nicely.  I attended a retirement party last night.  Always nice to enjoy some adult time and get to know your colleagues a little better.

I wanted to share a quick and easy snack recipe with you.  This is a nice, healthy recipe, that packs a good dose of protein.

As I mentioned last week, I am totally obsessed with this new (to me) seasoning.


It is good on pretty much everything I have tried it on so far.  I am especially liking it on scrambled eggs.

While trying to think of new things to eat it on/with, I came up with this delicious little snack option. Roasted everything edamame!

Roasted Everything Edamame


  • 1 bag (12 oz) frozen, shelled edamame
  • 1 tablespoon olive oil
  • 1-2 tablespoons (depending on how you like things seasoned) Everything but the Bagel Seasoning Mix

Directions: Pre-heat oven to 400.  Pour edamame onto a sheet pan. Drizzle on olive oil.  Sprinkle seasoning.  Mix all ingredients until well coated.  Bake for 30-35 minutes, until just starting to brown.

You could also try this with any other variety of seasonings. Garlic? Cajun? Lemon pepper?  The options are endless.
