Happy Tuesday friends, hope your week is off to a great start. No complaints over here. I don’t think I mentioned this on the blog, but I broke my Fitbit last week. It was a tragedy, but fortunately, still covered by the extended warranty. Not only that, but I got to order my replacement on Sunday through Amazon, received it Monday. Amazon Prime for the win.
I have been trying to prepare healthy snacks each week, no matter how well I plan my meals, I end up feeling snacky every evening. I decided to quit fighting it, and make sure I have something satisfying and healthy on hand. Enter these little babies…
Strawberry lemonade protein balls. They have been the perfect snacky little something sweet the last few days. The come together super fast, are no bake, and are vegan if using a vegan protein powder (I used Vegan Smart All-in-one, any protein powder you like the taste of will do). I love the tartness of the lemon, with the sweet little strawberry pieces.
Strawberry Lemonade Protein Balls
- 1 packet/scoop Vanilla protein powder
- 1/4 cup cashew meal
- Zest and juice of half a lemon
- 1 tablespoon maple syrup
- 1 tablespoon water
- 2 tablespoons coconut oil (softened or melted)
- 2 tablespoons crushed freeze-dried strawberries
- unsweetened shredded coconut (optional – for rolling)
Directions: Combine all ingredients except the strawberries and shredded coconut in a bowl until well combined. The mixture should combine well and stick together. Once combined, fold in the crushed strawberries. Using your hands form into balls and roll in shredded coconut if desired. Refrigerate for at least 30 minutes to set and enjoy:) Leftovers should be kept in the fridge.
