Happy Wednesday, how is your week going? I can’t believe it is already Wednesday. This week has just been flying by! Work has been busy, and we have lots of little projects at home, so it has been go, go go.
I did want to break from all the hustle and bustle to share a quick recipe with you though.
How about some breakfast!
With all the delicious Cinco de Mayo food ideas floating around, I decided to go with a Southwestern Style breakfast pizza. This was delicious! It is garlicky, and has a nice spice from the green chile. It feels indulgent and weekend brunchy, but comes together so quickly, it could easily be a week day meal. This breakfast pizza is hubs and baby approved, so we will definitely be having it again soon.
Southwest Breakfast Pizza (serves 2)
- 2 pieces naan bread (I used the frozen garlic naan bread from Trader Joes)
- 2 eggs
- 1/4 cup shredded cheese
- 1/4 cup black beans
- olive oil
- toppings: green onions, green chilies, cilantro
- Salt and pepper
Directions: Pre-heat oven to 400 degrees. If using frozen naan bread, defrost prior, or pop in the oven for just a couple of minutes to defrost.
Lightly brush the naan bread with olive oil. Then, dividing between the two pieces of naan, sprinkle on the black beans, cheese and chilies. Make a space (push aside toppings) in the middle of each pizza for the egg.
Gently crack an egg onto each pizza, in the space made. Salt and pepper to taste, and sprinkle on cilantro, green onions and any other desired toppings/seasonings.
Bake 12-15 minutes, or until eggs are cooked as desired.
