Hey, hows your week going? I love short weeks, so excited that it is already Thursday. Last night I had planned to go to Turbokick, but for some reason a run on a track was really speaking to me. So I headed over to the high school near my house, did about a mile track run and finish up with about 20 minutes of stadiums.
In case stadiums were not a torture inflicted upon you by high school coaches (I kid, they are pretty fun and hurt so good, kind of like burpees) you basically start at one end, running up and down the stairs, before shuffling over to the next set of stairs. They are great cardio and really get the glutes and quads burning.
Afterwards I was feeling overheated and tired and in the mood for a big bowl of cold watermelon. Watermelon is so refreshing and is definitely one of my favorite summer fruits. It is awesome on its own, but I thought I would share with you my favorite way to eat it.
Watermelon Mint Salad
- 1/2 watermelon
- Juice of half a lime
- Handful of mint
- pinch of salt
Directions: Dice up watermelon and place in bowl.
Chop mint and add to watermelon.
Add the juice of half a lime and just a pinch of salt. Mix well and serve.
*This is not an exact measurement kind of recipe, feel free to adjust the amounts of mint, salt and lime to meet your tastes.
