Weekend Recap

Hey guys.  How was your weekend?  Any fun adventures?  We had a nice blend of lounging, mixed with friends and family time, it was awesome!

Our Saturday started bright and early.  The little guy woke up about 5:15 and wanted everyone up with him.  Since we were all up so early, we decided to enjoy some outside time before it heated up too much, and went to the playground.  Thank goodness for travel mugs because coffee was necessary.

Later in the morning I taught class.  Then I joined the hubs and kids in hanging out with my in-laws for a bit. Afterwards we ran a couple of errands, and the kids and I played and enjoyed a lazy afternoon.

The hubs bought my a pint of my favorite salsa while while he was out and about on Saturday and I spent the rest of the weekend dousing everything in it (I am serious, the salsa is almost gone already and I have been the only one eating it).  It is so, so good.  Tucson peeps, if you have not tried the salsa at Eclectic Cafe, I would highly recommend it.  Aside from the amazing salsa, the rest of their food is also delicious.


After the kids went to bed on Saturday, I did some kitchen experimenting, trying to make an at home version of my beloved blueberry Rx Bars.

Notice that this looks absolutely nothing like an Rx Bar.  Normally for Rx type bars I use powdered egg whites, which work great and makes them no bake.  Powdered egg whites can be a little hard to find though, so I was trying to make a baked version with regular egg whites.  The result was pretty cake like, delicious, but not really what I was aiming for.  I have been affectionately referring to it as my fail cake since.  I will try again soon and see if I can nail down a copy cat bar.


Sunday I was up bright and early on my own, so I decided to head over to the track for a quick workout before the family was up.  This beautiful sunrise was my reward for being out and about so early.


Once the family was up and we had breakfast, we headed over to a friend’s house for a morning swim date.  It was a great time.  The kids had a blast in the pool, and it was so nice to relax and catch up with friends.

Later in the day I headed to my book club at a new to me restaurant called La Cocina.  The food was amazing and there was live music playing.  They had so many awesome sounding things on the menu (Salmon ceviche, smothered burritos, yum!), I am looking forward to returning post Whole 30 to be able to sample more. It is such a fun little place, and has all the quirky charm I love about Tucson.

The rest of Sunday was spent hanging out and preparing for the week.

On the workout front, I looking forward to a mix of classes and solo workouts this week and am going to try to get more yoga in.  I really didn’t do much yoga last week and definitely feel a little tight and in need.

    1. Lol! I have really been feeling the track recently, but I hadn’t been in ages. I feel like the track makes me be really honest about how much I have actually ran. On a trail or in the neighborhood I have a tendency to think I have gone further than I actually have.

  1. The homemade RX bars still looks delicious! I wouldn’t even know where to find powdered egg whites. You might have to search through Whole Foods or Earth Fare for that. Glad you had a great weekend!

    1. Thanks! It really does taste good, I may share the recipe in case anyone wants a more cake like healthy snack. I usually buy powdered egg whites at Trader Joe’s, it is with protein powders usually.

  2. That salsa looks delicious! I could honestly eat anything with salsa. It’s so versatile! Those bars look delicious- love those big blueberries!

    1. I feel like once you are in the routine of getting up early it’s no big deal but that first week of doing it had so hard. Hope you have a good run.
