Peach Chia Pudding + Happy Birthday Hubs!

Hello friends, hope your week is off to a fantastic start!  I wanted to start this post by wishing the hubs a very happy birthday!  The world is better and brighter with you in it and I hope you have an amazing day!

I have been missing my peach oatmeal since starting Whole 30 and looking for a sweeter breakfast that is Whole30 complaint.  Also, I still have bunches of peaches that I am trying to consume.  While considering potential breakfast options, my thoughts drifted to chia pudding.  After confirming that I could have chia seeds, this delicious chia pudding was born!

This was so, so good and the perfect light breakfast I was craving.  The hubs even liked it, and he usually shies away from anything with chia seeds.  It is naturally sweetened with just a few dates, but you could also use sugar or honey if preferred.  I love peaches, and they blend so nicely with some creamy coconut milk. This recipe is vegan and Whole 30 friendly and oh so delicious.

Peach Chia Pudding

Makes 2 servings


  • 3 dates, pitted
  • 3/4 cup coconut milk
  • 1 cup water
  • 1 cup peeled and diced peaches
  • 1/4-1/2 teaspoon cinnamon (to taste)
  • 1/4 cup chia seeds

Directions: Combine the coconut milk, water, dates and about 1/3 of the peaches in a blender and blend until smooth.  Pour into a bowl and add in remaining ingredients (cinnamon, peaches and chia seeds) and mix to combine.  If desired, pour into individual containers, or keep in bowl.  Cover and refrigerate overnight.peach chia 5 I poured mine into a couple mason jars for a portable breakfast the next day.
