Happy Wednesday! Is it just me, or is this week dragging? I feel like it should be at least Thursday already. Today I thought I would share a day of eats, this is from Monday. I am glad I snapped some pictures on Monday, because yesterday was super busy and I wouldn’t have managed to capture half of my meals for the day.
Before we get started, I do have to share something my little dude told me yesterday. We had done some early celebrating of the hubs birthday over the weekend, including cake and singing happy birthday. So when the little guy woke up yesterday, I asked him if he wanted to go wish daddy a happy birthday. He responded with “Nah, I already did that.” He cracks me up, apparently you only get one happy birthday from him.
So now to the eats. I am in my last week of Whole30 and have gotten into a pretty good groove with my meal planning. For breakfast I had half of a leftover chicken and green chili omelet, with roasted potatoes and blueberries. I was still a bit peckish after this, so I also had a unpictured handful of raisins and walnuts.
A few hours later I snacked on carrots with leftover cashew cheese. This was my first attempt at vegan/cashew cheese. I want to share the recipe, but have a little tinkering to do first, so I can get it just right.
Lunch was some leftover pork fried cauliflower rice (sorry, not the prettiest picture ever), and a blueberry muffin Larabar.
The afternoon was a busy one, so it was a bit of a rush getting the babies home and getting dinner ready. I was starving by the time we got home, so I started with some leftover taco salad (salad mix, taco meat and salsa), eaten while preparing dinner for the family. I know, I lead a glamorous life. The salad was followed up with a Whole30 friendly twice baked potato using some chopped chard, a little leftover cashew cheese and some ghee. It turned out pretty well, and I was pretty stoked that there was enough for me to take it for lunch the next day.
