Weekend Recap – Father’s Day Weekend

Hey friends!  How was your weekend?  We had a nice, low-key weekend over here, with a focus on celebrating the hubs and our favorite dads.  To kick off the weekend, I decided to see what the Instagram hype was about and make cloud eggs for the babies.fdw13

They were fun to make, and the babies got a huge kick out of them.  I would not say they are my favorite way to actually eat eggs, but they did make me kinda crave a meringue cookie.

The hubs also surprised me with some new leggings Friday night.  They are SO comfy, not at all see through and really affordable.  He bought them at Costco, but Amazon also carries them here.  These are probably my new favorite leggings and I am trying to stop myself from ordering them in every color.  I always have a hard time with how expensive leggings can be, so I get pretty excited when I find affordable ones I like.


Saturday I taught in the morning, after which we had some family errand time, grocery shopping and getting ready for Fathers day.  I was pretty thrilled to find Rx Bars on sale for about $1.50 a piece, at Whole Paycheck Foods no less!


The apple cinnamon is a new to me flavor, anyone tried it yet?  I am saving them for work snacks this week, so I haven’t tasted it yet.

I also enjoyed a friend date to go see Wonder Woman, I loved it.  I did not actually know Wonder Woman’s story, so it was cool to expand my super hero knowledge, and it was also just a good movie.  Also, lots of good previews.  Fingers crossed the hubs and I can figure out some movie dates over the next few months.


Sunday was all about celebrating dads.  The babies slept till 6:00 (I realize that is not late, but kind of late for them), and we lounged for a while before getting a brunch ready to celebrate the hubs and our dads.  We made cinnamon rolls, chorizo and eggs, potatoes, fruit salad and coffee.  The highlight for me was definitely the fruit salad.  It was Papaya, mango, grapes and raspberries.  I always love mango, but had really been craving papaya recently.  This fruit salad was everything I wanted on a hot summer day.


It was nice to spend the morning with our little family and the grandparents.  My little guy cannot get enough swimming, so most of the morning was spent in the water, laughing and splashing with my dude.  It was definitely my favorite part of the day.  There is just something so infectious and magical about how excited little kids get about things they love.

fdw6the rest of the day was spent relaxing, grilling and celebrating the hubs.  He is definitely the grill master in our house, so I always feel a little guilty when he does all the cooking on his day.  It was an awesome meal though and he seemed to be enjoying himself.

  1. 113! Holy smokes that is hot! We are at 85 in Boston all week but 100 percent humidity so it’s quite sticky! This weekend we did a lot of relaxing and celebrating my husband and my dad for Father’s Day, it was great! I love RX bars also- so good!

    1. Fortunately we don’t have much humidity here. 85 with humidity definitely feels hot and sticky. They RX Bars are just so good! Hope you have a great day.

  3. Yes, it is roasting here in BHM, AL but not 113 roasting but maybe with the humidity, it feels like that! My friend just turned me onto those RX bars! I’m not normally a bar person, but those are surprisingly good! I bought the blueberry ones first

    1. A coworker of mine showed them to me last week, I thought they were pretty cute. AZ is a dry heat too, I don’t mind hot, but today is too hot in my book. Hope you have a great day!

  4. I’ve seen those cloud eggs all over IG and Pinterest and always think it looks like way too much work for eggs! Haha. Plus it seems like a textural thing…don’t know if I’d like it, but suppose it’s worth a shot if they’re so popular. What brand are the leggings? You can never have too many!

    1. They are tuff athletics, I love them. I always worry about them being see through since I am bending over in front of a class all the time, and they are not see through at all. The cloud eggs were not my favorite way to actually eat eggs, but were pretty quick to make and my little dude thought they were cool. Hope you have a great day!

  5. Love love love everything (aside from the temps). Everyone is talking about cloud eggs right now! I still don’t know anything about them. I’m basically hibernating from the interwebs aside from my friends’ blogs and mine, occasionally. Dat fruit salad. DDDAAAAMMNNN
    Also, totally want to see Wonder Woman. Need to.

    1. Oh I wish I was in a super air conditioned movie theater now, it was good, I’d recommend it. That fruit salad is still my jam, I love all the tropical fruits.
