Red, Chia and Blue Pudding + Happy Birthday Baby Boy

Hey friends, so happy to have you visiting the blog today.

Today is a very special day, because it is my sweet baby boy’s birthday!  How he is already three is beyond me.  I feel like it was just yesterday I was marveling at his teeny tiny fingers and toes.  Now he is running everywhere and telling me stories (and I am still marveling at his awesomeness)!

I also have a quick recipe for you today.  With a little red, white and blue pizzaz in honor of the approaching holiday.


This chia pudding is super easy, and can be made in advance, so perfect for meal prep.  It is also refreshing on a hot summer day.  The pudding has a mild almond flavor, courtesy of a little almond extract.  Which pairs nicely with the sweetness of the blueberries and raspberries.  I topped it with this granola, which added a delicious little crunch.

Red, Chia and Blue Pudding

Serves 2

For the pudding:

  • 1/4 cup chia seeds
  • 1.5 cups almond milk (I used unsweetened vanilla)
  • 1/4 teaspoon almond extract

For the parfait:

  • Prepared chia pudding
  • 1 cup blueberries
  • 1 cup raspberries
  • 1/3 cup granola


To make the chia pudding:  Combine the chia seeds, almond milk and almond extract in a container, mix thoroughly.  Cover and refrigerate overnight.

To make the parfaits: Get two bowls or containers (mason jars work great if you are making this as part of your meal prep).  Put a layer of blueberries in the bottom of each container, about 1/4 cup.  Spoon some chia pudding over.  Add a raspberry layer (about 1/4 cup) and top with more chia pudding.  Repeat.  Sprinkle half of your granola over each parfait to top.


*If making as part of meal prep, save the granola and add just before eating.

  1. Happy birthday to your baby boy! I remember when my daughter was born I wondered “I wondered how she is going to be when she’s 3?” I figured that by that age she’d be talking and stuff. Then I blinked and she’s 25!

    I am going to try overnight chia again – it was a texture thing the first time I tried it, but not sure I did it right.

    1. Thank you! The time goes so fast, it totally feels like I will turn around one day and he will be grown, ahhh!

      I always liked the texture of chia pudding, but I also like tapioca pudding and it is kind of a similar texture. I think that parfait style is nice if the texture is a little weird for you, as the berries and granola add some other textures to it. Let me know if you give it a try.
