Welcome to the blog today!  So good to see you!

As you maybe aware, since I profess my love of them all the time, I am a huge fan of Rx Bars.  I have made a homemade version of the Chocolate Coconut variety that I love but had yet to nail down a homemade version of my all time favorite blueberry flavor.  Well, friends, I have finally gotten it!  These homemade blueberry Rx Bars are delicious and packed with real ingredients and protein.  I made a big batch of them over the weekend and am now almost out and kicking myself for telling the hubs to help himself.

Homemade Blueberry Rx Bars

Makes 10 bars

Directions: Combine all ingredients, except the blueberries in a food processor.  You may need to process for several minutes, until a grainy dough forms.  If the mixture seems too dry, slowly add water, 1/2 tablespoon at a time.  You want the mixture to stick together well, but not seem wet.  Once well mixed, press into a 9 x 9 baking sheet that has been lined with parchment paper.  Gently press blueberries into the top.  Cover and refrigerate for at least 30 minutes before cutting.  Store cut bars in the fridge, in a sealed container.

Hope you enjoy these bars as much as we have!

  1. This is awesome! I love RX bars, but don’t buy them too much since they’re kind of pricey. I know some people hate them, but the maple sea salt are my favorite ones I’ve tried. These look deliciouslove the idea to use dried blueberries!

  2. I’m so excited to try these. I tried the chocolate coconut and loved them but blueberry is my favorite!!!!!!!!!

    1. I love the dried egg whites for bars. You can’t taste it, it adds some protein and it doesn’t have any additives or supplements added to it, so I don’t worry about if it’s okay for the babies.

    1. I have made them with the Trader Joe’s dried blueberries and the bulk bin ones from Sprouts. I think any brand would be fine, but would suggest the wild ones since they are smaller and you can get a little into each bite.

  4. Ooh, I’ve never heard of Rx bars before, but I’m certainly going to try these- they look amazing! Thank you for sharing!
