As you maybe aware, since I profess my love of them all the time, I am a huge fan of Rx Bars. I have made a homemade version of the Chocolate Coconut variety that I love but had yet to nail down a homemade version of my all time favorite blueberry flavor. Well, friends, I have finally gotten it! These homemade blueberry Rx Bars are delicious and packed with real ingredients and protein. I made a big batch of them over the weekend and am now almost out and kicking myself for telling the hubs to help himself.
Homemade Blueberry Rx Bars
Makes 10 bars
- 3/4 cup Dried egg whites
- 1 cup Pitted dates
- 1/2 cup Raw almonds
- 1/2 cup Raw cashews
- 1/2 teaspoon Vanilla
- 1/3 cup Dried blueberries
- Pinch of salt
- 1-2 Tablespoons water (if needed)
Directions: Combine all ingredients, except the blueberries in a food processor. You may need to process for several minutes, until a grainy dough forms. If the mixture seems too dry, slowly add water, 1/2 tablespoon at a time. You want the mixture to stick together well, but not seem wet. Once well mixed, press into a 9 x 9 baking sheet that has been lined with parchment paper. Gently press blueberries into the top. Cover and refrigerate for at least 30 minutes before cutting. Store cut bars in the fridge, in a sealed container.
