A day in eats

Happy hump day friends!  Thanks for your book reviews and suggestions yesterday! I really value your reviews and appreciate the new book ideas!

It has been a little while since I shared a day in eats, so I thought today I would share what I ate on Monday.  My apologies in advance that these are not the loveliest of food photos, most of my week day meals are a pretty quick affair.

The day started with a couple of cups of water paired with coffee, which I was not yet awake enough to snap pictures of.  I try to make sure I have a big glass of water first thing in the am, and then to match my morning coffee with water.

For breakfast, I enjoyed some leftover triple squash pie.  I was inspired by this recipe, but went with a southwest flavor profile, using cotija cheese and green chile. I paired it with some deliciously ripe watermelon.

This kept me full for a while, and it was a busy morning, so the next time I thought to eat it was time for lunch.  I chowed down on some leftover baked chicken tacos, beans, salsa and a peach for dessert.  I also had a blackberry citrus seltzer on the side.

In the afternoon I snacked on a Quest Bar, and some hot pickles (so good!).

For dinner, I had some bean tostadas with more watermelon.  That watermelon is seriously the best one I have had in ages, I wish I had bought a second (possibly a third one).

Later in the evening, I snacked on some popcorn with nooch (nutritional yeast) and Italian seasoning (picture was pre-Italian seasoning), I also sneaked a couple bites of the hubs peanut butter and chocolate ice cream.


Overall, this was a fairly normal day in eats for me, I generally try to get a vegetable in at lunch and dinner, but I got a fair amount of breakfast veggies in.

Had any great meals recently?  Are you an evening snacker?  I try not to graze too much at night, but I eat dinner really early with the kids, so I frequently need a little something later in the evening.

  1. I am jealous of all the watermelon! They are so expensive here…..like $20-$30 for a big one expensive. I eat early as well….around 5. We also go to bed around 9 so I get by without a snack most nights.

  2. Your breakfast looks so good! And the hottie bites….. I need to look for that!!! Yum! Where do you find the pickles? I dont think I’ve ever seen them but they sound so good!!!!

  3. Those hot pickles look soo good! I need to try them. I love when I pick a perfect watermelon and yours looks delicious. Popcorn is the best post dinner snack in my opinion.

    1. I used the link recipe except I used cotija, green onions and green chile instead of the goat cheese and parmesan. Also, I left out the tomatoes and spinach, mainly because I didn’t have any. You can find nutritional yeast at most grocery stores (and on amazon of course), I bought it at Sprouts. It tastes cheesy, it has always reminded me of like boxed mac and cheese flavor.

    I’m not really an evening snacker – I try to brush my teeth right after dinner so I can avoid it! I crave snacks more around 3:00 pm…

  6. Popcorn and watermelon are my top snacks at the moment! I’m a snacker all day haha – I eat small meals or graze throughout the day since I never seem to have a moment to myself at school.
    But I always have to have something sweet before bed 🙂

  7. Looks like a tasty day 🙂 I’m a big fan of the chocolate chip cookie dough quest bars – especially when I heat them in the microwave for 10 seconds. I’ve never tried the strawberry cheesecake before, is it your favorite?

    1. I had never thought to microwave them, but I will have to try that! The blueberry muffin or oatmeal chocolate chips ones are probably my fave. Hope you have a great day!

  8. That watermelon really does look good! i’m not much of a snacker, but will occasionally have popcorn or a small mug of ice cream :-).
