Happy Tuesday! Hope your week is off to a great start! My Monday started out with teaching a great group for my total body class! I am so motivated by my folks who join me for an early morning workout, they are an awesome group! The rest of Monday was pretty routine. I rediscovered Nutella, so trying to control myself around that, lol.
Today, I wanted to share one of my favorite, super fast meal ideas. It no joke takes about 5 minutes to make (not including bacon cooking time, if using) and is delicious. I love having this salad for breakfast, as it helps me start the day with some veggies. It is also perfect for a quick lunch or light dinner.
I can’t claim credit for the idea itself. I had a similar dish at a local favorite, Ghini’s, about a year ago. I have been making different variations of that salad ever since! If you are in the Tucson area, I would recommend Ghinis, it is an adorable French bistro with a great brunch, including a lovely variety of mimosas!
Here is my current favorite version of this salad. Feel free to customize to your tastes. The bacon can be left out to make it vegetarian. Some cheese would also be lovely. Let me know what flavor combos you come up with, I’d love to try them out!
- Couple handfuls salad greens (I used an organic spring mix)
- Drizzle vinaigrette – I would highly recommend Trader Joe’s Sweet Onion & Bacon Vinaigrette Dressing
- 1-2 pieces crumbled/chopped bacon (I used turkey bacon)
- 1 over easy egg
- salt and pepper to taste
Directions: Toss salad with a drizzle of vinaigrette to coat. Place in bowl. Sprinkle with bacon. Gently place the egg on top, season with salt and pepper to taste. Serve with toast or warm bread, enjoy!
