Healthy 5 minute meal – salad with egg

Happy Tuesday! Hope your week is off to a great start! My Monday started out with teaching a great group for my total body class!  I am so motivated by my folks who join me for an early morning workout, they are an awesome group!  The rest of Monday was pretty routine.  I rediscovered Nutella, so trying to control myself around that, lol.

Today, I wanted to share one of my favorite, super fast meal ideas.  It no joke takes about 5 minutes to make (not including bacon cooking time, if using) and is delicious.  I love having this salad for breakfast, as it helps me start the day with some veggies.  It is also perfect for a quick lunch or light dinner.

I can’t claim credit for the idea itself.  I had a similar dish at a local favorite, Ghini’s, about a year ago.  I have been making different variations of that salad ever since! If you are in the Tucson area, I would recommend Ghinis,  it is an adorable French bistro with a great brunch, including a lovely variety of mimosas!

Here is my current favorite version of this salad. Feel free to customize to your tastes.  The bacon can be left out to make it vegetarian.  Some cheese would also be lovely.  Let me know what flavor combos you come up with, I’d love to try them out!

Per serving

Directions:  Toss salad with a drizzle of vinaigrette to coat.  Place in bowl.  Sprinkle with bacon.  Gently place the egg on top, season with salt and pepper to taste.  Serve with toast or warm bread, enjoy!

  2. I’ve never thought to have a salad for breakfast but this gave me a new breakfast idea! My go to meal is probably a sandwich with some deli meat. It fills me up and involves no clean up (if you use a paper towel as a plate)

  3. I LOVE over easy eggs – I always call them dippy eggs and have been eating them over roasted vegetables since college. I love how the runny yolk makes a sauce 🙂

  4. Sweet onion & bacon vinegrette?!? Where has this been all of my life?

    I love eating a salad similar to this but it also includes sliced Granny Smith apples. Turkey bacon is also a household fave. I always recommend people try all different brands of it though as it varies greatly!

  6. Yummy! Eggs on salad are a great idea – extra protein and good texture! My typical speedy meals to go always involve a sweet potato cooked in the microwave.

  7. Dinner in 5 minutes? That’s my kind of meal! I love the versatility of eggs – breakfast, lunch, dinner – yep! Plus, they’re so quick to cook. They’re definitely one of my “go-to” quick cool meals.

  8. I love salad and I love over easy eggs but never thought to eat them together. I’ve only ever used hard boiled eggs. I will definitely have to try this!
