Hi, friends! We are almost to Friday! Woot, woot! I don’t know what it is, but I feel like this week has been about 11 days long already. It hasn’t been a bad week or anything, but every time I look at a clock I am like “how is it only _:__?” Does that every happen to you? I think I must be ready for a long weekend.
In continuing with my super fast meal trend for the week, I wanted to share one of my favorite week night meals. I had seen various egg roll in a bowl meal ideas on Pinterest, and have since perfected my own spin on this dish. This comes together in about 15 minutes and is a nice mix of protein and veggies. If you have the time, using fresh garlic and ginger pump up the flavor even more. I used dried seasonings in the recipe though, because I know I don’t always have time for chopping and prepping during the week. I am guessing that lots of you are short on time during the week as well, so I thought this super fast version would be nice to have.
I love this dish as dinner on its own, but will also sometimes serve it with rice and/or steamed veggies. It is also super easy to customize. You can use coconut aminos for Whole 30. Extra veggies can be added. I personally love spicy food, so I usually add a dash of sriracha to mine.
Weeknight Egg Roll in a Bowl
- 1 tablespoon sesame oil
- 1 pound ground turkey (please feel free to use ground chicken, pork, etc if preferred)
- 1 bag (1 lb) coleslaw mix (cabbage and carrots)
- 1/2 teaspoon ground ginger
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2-1 teaspoon chili garlic sauce
- 3-4 tablespoons liquid aminos (soy sauce or coconut aminos would also work here)
- 3 green onion stalks diced
- 1 tablespoon sesame seeds
Directions: Heat sesame oil in a skillet using a medium-high heat. Add ground turkey and season with powdered onion, garlic, and ginger. Once meat is browned, add in coleslaw mix, liquid aminos, about 3/4 of the green onions and the chili garlic sauce. Cook for another 5-7 minutes, stirring frequently until veggies have softened. Sprinkle with remaining green onions and sesame seeds and serve.
