Friday Favorites

Happy Friday! How was your week?  Mine was one of highs and lows.  I felt a bit run down (my allergies have been really getting to me) but had some great highlights along the way.

I took Monday off work since I knew we would be getting home on the later side Sunday. Having the day off was awesome as I was able to catch up from the weekend and take care of grocery shopping and some other chores.  I started the day with an Orangetheory class.  It was not my best performance but felt great to get a solid workout in after all the sitting in the car the day before.


Afterwards, I did a stock up trip to Trader Joe’s. I actually really enjoy grocery shopping, so being able to leisurely shop on my own was a bit of a treat.


Eats wise, it has been a pretty good week.  Lots of egg and veggie scrambles for breakfast, and healthy lunches and dinners.    I did give in and bust out the candy corn this week, but hey, it’s fall.

We made this buffalo chicken casserole early in the week and enjoyed leftovers for lunch.  This is a major favorite over here.  The recipe is originally from this Fed and Fit cookbook.  Since I don’t follow a paleo diet, I take a few shortcuts and use shredded rotisserie chicken, instead of cooking my own, and store-bought ranch.  I would highly recommend trying out this recipe.  Every time I make it, we manage to polish off the whole huge casserole in a couple of days.


I am also loving my friends and spontaneous playdates this week.  On Tuesday the kids and I met a friend at the playground on the way home.  It was kind of a hectic little outing, and if we are being honest, I was a bit on the cranky side.  But it was still great for the kids and I to see our friends and get out a bit.  Also, I appreciate my friends putting up with me, even when I am a little cranky, and trying to make me feel better.  I am a lucky girl!

We also got to meet up again for lunch later in the week.  Fortunately, I was in a much better mood, hard to be cranky with good company and this deliciousness.

I also got some new booties, which I am super excited to wear as it cools off.  These little cuties were $30.00 at Costco and I just could not pass them up.  Amazon has them here.

What are a couple highlights from your week?  Anything you are looking forward to this weekend?  We are planning some cleaning and catching up after being away last weekend, but the hubs and I do have a night out on Saturday.  Which I am pretty excited about.  My little guy also starts itty bitty sports this weekend, so I’m looking forward to that cuteness overload

  1. Egg scrambles are the bestttttt. I haven’t purchased candy corn yet but I DID buy Boom Chicka Pop candy corn pop corn…addicting. And I can’t believe you got those boots at Costco! That’s so awesome!! My Friday highlight is leaving tonight to go see my family and some friends this weekend!

    1. I did not know that Boom Chicka Pop had a candy corn flavor but I know what I will be looking for this weekend! That sounds awesome. Yeah, Costco surprisingly had a really nice little shoe selection the last time I was there. Hope you have a wonderful weekend!

  2. Im a sucker for anything buffalo chicken! And egg scrambles are my go to clean out the fridge meal. My sister just got a pair of boot just like that, she is only 8 and walks around in them with the mini heel like she is a star.

  4. Sounds like an awesome week! I wish I had time to take the kids to the park but they have so many after school extra-curricular activities there is no way. Also, that buffalo chicken casserole looks great.

  6. That buffalo chicken dish looks so good! Maybe I will incorporate it into my meal planning this week. One of my highlights was that my husband surprised me with a bouquet of pink roses last night. I wasn’t expecting them at all, so it was truly a sweet and romantic surprise!
