What I Ate Wednesday

Happy hump day! How was your Tuesday?  I started the day with a stubbed toe, a scraped hand and tried to put my pants on backward.  Not my smoothest of mornings, but it happens.  Despite a kind of rough start and a busy workday, it shaped up pretty well overall.  Thank goodness for a good workout to end the day, always leaves me feeling calmer.

For my post today, I am sharing a day of eats, this past Monday to be exact.  I feel like this is a pretty honest account of a stressful weekday’s eats for me. I had planned for some more exciting meals, but there was just no time.

A day in eats:

I started the day with a big cup of water, followed by an iced coffee and a hot tea. I still had a bit of a cold going on, and it had my throat dry and in need of all the beverages. My current favorite coffee combo is a scoop of collagen, splash of almond milk, cinnamon and a drop or two of liquid vanilla stevia.

A short time later I had some Ezekiel cinnamon raisin toast with butter (I ended up having a second slice) and an Emergen-C (all about the beverages!)

Once I got to work, I had a sweet potato breakfast bowl, for which I will be sharing the recipe next week. This was absolutely delicious, though slightly less pretty than the one pictured below. This one was from the weekend, my Monday one was all mixed together in a Tupperware.

We had a cookie exchange at work on Monday. I decided to participate even though I am trying to limit the sugar a little right now since it was such a dessert rush at Thanksgiving and with more coming for Christmas. I did just take the cookies home for the family, but couldn’t resist breaking into this chocolate peanut candy my coworker makes each year.  It is so good. I’d like to say I just had a piece, but that would be a fib. I ate the whole bag over the course of the workday (no regrets).

For lunch, I had leftover ham, green beans, and twice baked potato. The hubs loves ham, so I planned a ham dinner for him on our actual anniversary. I also had a cute little mandarin orange on the side.

After a busy afternoon, I snacked on this bag of kettle corn on my way to pick up the babies. I love popcorn and these individual bags are so convenient.

I had plans to make a big dinner, but we got home late, so leftovers and freezer items to the rescue! I made the babies picky plates out of leftovers and fruit. I cooked up a little more leftover ham with a bag of frozen veggies for myself, with some random seasonings. It was ready in about five minutes and actually really good. I also had a few chips with salsa while getting everything ready.

I went to a later Orangetheory class and needed a little something afterward so I ended the day with a smoothie made of almond milk, a scoop of Vega protein powder, half a banana and spinach.

All in all, not too shabby. I definitely got plenty of sugar in, but got a good amount of fruit and veggies as well.

  2. Fun post! I’m always struggling to get all my water in throughout the day. LOL I’m getting there though. Those little popcorn bags look so yummy. I had a cookie exchange over the weekend and brought a lot into work so I didn’t keep eating it all!


    1. Nope, if you are drinking hot coffee it dissolves right in and I can’t taste the unflavored kind at all (they have some flavored ones you can use as creamer). If you are drinking cold coffee it can be a little harder to mix in.
