Lemony Garlic Baked Salmon

Hey friends! How are you today? How was your Monday? I was off yesterday and enjoyed a little extra time with my minis. They even ” helped” me with some chores!  I did a ton of laundry yesterday, and am proud to say that I even put most of it away.  I actually kind of like doing laundry, but I hate putting it away and usually put it off for way too long.

For a long time, I was intimidated by the idea of cooking fish at home. The hubs does not really eat fish, so I wouldn’t make it for dinner, and just didn’t really have much experience preparing it. Over the last year or so, I decided that I needed to get over that and have been making fish a lot more regularly. Salmon is one of my favorites, and it is so easy to prepare. Today I thought I would share one of my favorite ways to prepare salmon for a weeknight dinner. It takes minutes to prep and bakes up quickly. I usually roast some veggies while it is baking and maybe make some instant rice, for a healthy dinner that is ready super fast and requires minimal dishes!

Lemony Garlic Baked Salmon

Serves 4

Ingredients:

1 salmon filet, skin on (about 1-1.25 lbs)

1 lemon, sliced into rounds

2 tablespoons olive oil

2 cloves minced garlic

1 teaspoon Italian seasoning

Dash red chile flakes

Salt and pepper to taste

Directions: Preheat oven to 400.  Lightly spray a sheet pan with cooking spray.  Blot salmon with a paper towel.  Mix together olive oil, garlic, Italian seasoning and red chile flakes.  Salt and pepper fish, then spoon olive oil mixture over top.  Top with sliced lemons.  Bake for 20-25 minutes, until it flakes easily with a fork.

Do you eat fish?  Are there any foods that you were nervous to make on your own?

Hope you have a great day!

  1. This salmon looks delicious! I don’t tend to make fish at home, and thats mostly because I’m intimidated by it. You make it look so easy, though. Now I have to give it a try 🙂 Also – bonus points to you for putting the laundry away! Mine is definitely still sitting draped over my laundry basket. (Hey, at least I pulled it OUT of the dryer, right?…. ha).

    1. Taking it out of the dryer definitely counts for something! I don’t know why I dislike putting laundry away so much, but I do. Salmon is super easy to make at home, let me know if you give it a try.

  2. I am not a big seafood person actually! But I think I’ll try this on chicken and see how it goes. One thing that makes me nervous to cook at home is chicken in the oven. I used to be able to do it really well and then a few times it came out rubbery so I’ve just stopped. I’ll only use the oven if it’s a recipe that I can follow.

    1. I think this would be a great flavor profile for chicken as well! I used to be always be afraid of undercooking chicken, but I have gradually gotten more comfortable with it.

  3. My neighbor just gave me a ton of lemons from their tree and I have been going lemon crazy! This sounds so delicious. I used to love salmon, but then I took those omega-3 fish oil supplements during pregnancy and I also had epic morning sickness…so salmon has yet to work back in the rotation. Lol. But this recipe makes me want to give it a go!

    1. Sorry you had such bad morning sickness, that is rough! Yes to all the lemon, it is such a refreshing flavor.

  4. Salmon is one of our favorites and this looks delicious! Tonight we are having a whole chicken in our crockpot (it’s already in there) but tomorrow I may just have to try your salmon!!

    1. Thanks Lauren. I think it would be good flavors for chicken as well, if you eat chicken. Thanks for checking it out!

  5. I need to try this! My husband is skeptical about fish too. I just need to make it and see what happens.

  6. I love the simplicity of this dish! I don’t think salmon needs a ton of additional sauce to make it good. This is fresh and I bet, so tasty!

  7. My hubs doesn’t eat much fish either, and I felt like I was missing out on my favorites. I started grilling salmon on Sundays and portioning it out as lunches for the week. (Freezes great too!) I like my salmon with soy sauce and wasabi. I’ve never had it with italian dressing – I will definitely give this a try!

    1. That sounds good! I love soy sauce and wasabi with sushi, so I’m sure it would be delicious in a salmon marinade.

  8. I’ve never thought to use garlic with salmon! Usually I stick with fresh citrus flavors or more savory sauces, but this recipe sounds delicious! I’ll have to try this the next time we get a good deal on salmon!
