Hey there! Before we jump into the weekend, I wanted to let you know that I will likely be decreasing my posts, at least for the next few weeks. I plan to keep posting Monday, Wednesday and Friday, and will likely post at least one additional time most weeks (I like visiting with you guys). I will miss posting Monday-Friday, and will get back to that schedule in the future if I can, but for right now I will need to scale back just a little bit. Also, stick around for the giveaway at the end of this post.
Now, weekend recap time. How was your weekend? Ours was great, but I feel like it was over in just a blink. Friday afternoon was a hectic one at work, so we all got home a little later than normal, we quickly found our way into a weekend groove though.
I have to share this story about my little guy from Friday, because I was cracking up telling the hubs about it later. I was tucking him in and he had his eyes closed and seemed to be just about ready to doze off, when he looked over at me with the most adoring little look on his face. My momma heart was swelling up thinking he was about to tell me something super sweet when he said “momma, I love……apples….and English muffins.” He then rolled over and fell asleep. Yes son, I love those things as well, but I was kinda hoping for an “I love you, momma.” Lol, oh well maybe next time.
Saturday morning we all slept in a little, and then enjoyed some coffee and lounging. I woke up with a real hankering for a donut, and the family was more than happy to get donuts with me. I went with an apple fritter, which was delicious.
I then was off to teach class (had a great time with my group, they always work so hard) and spent the rest of the morning hanging out with the kids and doing chores before heading to my 40 day revolution meeting. I have gotten several questions about the 40 day revolution, so I will be sharing more about it this week.
After the meeting, I scooped up the family and we headed over to a friends for dinner and a play date. Several families from the kid’s school were there and we had great time getting to know them better. I brought a big bowl of fruit to share, and spent a whole lot of time with the homemade salsa and guacamole they had out. It was so good!
Sunday started with an Orangetheory Class. I forgot my heart monitor, so no stats to share, but it was a great workout with alternating run, row, and weight sets. I love the days that have you doing lots of different things, it makes it go by so fast.
After class, it was pancake time. I used this almond flour pancake recipe, and added blueberries and an almond butter syrup (almond butter, a little syrup and a little water heated up and mixed together). I hadn’t had pancakes in a while and it definitely hit the spot.
Sunday afternoon we headed to a first birthday party. We ended up having to leave a little early, but had a great time there. It was a cowgirl theme, and I just loved this sign my friend made for the birthday girl.
We ended the weekend with homemade chicken noodle soup.
They are vegan cookbooks, that are fun and cheeky (lots of naughty language). The recipes are easy to follow and are real crowd pleasers. I have made them for plenty of vegetarians and meat eaters alike and they all loved the recipes.
